I made this super healthy chocolate pudding last night (in about five minutes) and posted it on instagram and several people have asked me for the recipe. Luckily, it’s the easiest thing in the world to make. It’s also delicious and completely guilt-free if you use only these ingredients.
You will need:
- one ripe avocado, peeled and pitted
- 4 tbsp natural cocoa powder
- 1 tsp vanilla
- 1/2 cup almond milk
- 1/4 cup all-natural real maple syrup
Place the avocado in a bowl and stir in cocoa powder and almond milk. Thoroughly whisk. Add vanilla. Keep stirring until the mixture is smooth. It may take several minutes to get all of the avocado to appear smooth. If you taste the mixture now, it’s a bit bitter, but you could easily eat it this way with a little homemade whipped cream. In fact, I’ve done that before and it’s delicious. But I didn’t have any cream this time so I decided to add some maple syrup to sweeten it up. You can use about 1/4 cup, which is about what I put in, or just do it to taste. Whip it up, chill for about 20 minutes and divide into 3-4 cups.
